Summer Starts with a Nice Smoke!






Today started with a great rib smoking event! I rode my trusty bike, the grocery getter, to Roger's Marketplace for three half racks of pork ribs. The smoker was ready to rock by 8am. We did our favorite 3-2-1 method; three hours in the smoker, two in the oven while wrapped in foil, then one hour cooling. The results were delicious! Even the Bostons got a little taste. Tomorrow more smoking and cooking--two chickens are being brined as I type.
